Ingredients:
- 1 Sirloin Steak (roughly 250-300g sliced)
- 1-2 tbsp Cornflour
- Salt & Pepper
- 100ml Soy Sauce
- 80ml Water
- 4 tbsp Muscavado Sugar
- 1 tbsp Ginger (finely grated or minced)
- 2-3 Garlic Cloves (crushed)
- 6-8 Spring Onions (cut into bite sized pieces)
- 4-6 Medium sized mushrooms (optional)
- 4 tbsp Veg Oil
Method:
- Season the cornflour with salt and pepper and then coat the beef in the seasoned flour
- Heat the veg oil in the wok (or frying pan) and add the strips of coated steak and cook until dark and crispy (oil needs to be very hot when adding the steak)
- Remove the steak to a plate topped with kitchen roll to remove excess oil
- Remove some of the oil from the pan leaving around 1tbsp
- Over a medium heat add the garlic and ginger and cook for 1-2 mins stirring often to avoid the garlic from burning
- Add the soy, water, muscavado sugar and a good grind of black pepper and stir
- Turn up the heat and allow to simmer for 2-3 minutes then add the mushrooms and the steak back to the pan
- Allow everything to cook together for a further two minutes before removing from the heat and adding the spring onions
- Serve with veg and/or rice.
- Sprinkle with chilli flakes (optional)
